Kidney Bean Goji Berry Brownies
❣️Kidney Bean Goji Berry Brownies❣️ I've played with this recipe lots lately and finally got the most delicious version that I want to share. It started out with black beans, but then I changed it to kidney beans. Started out with cocoa powder, but then I changed it to carob powder( more nutritious/less stimulating - which is nice because Jay likes having some bites!). Anyways, they're so good & are quite healthy/easy way to get some good plant protein/fiber/minerals/vitamins into you/your kids diet! Here's the recipe:
^ Blend 1/2c oats into a flour
^ 1.5c kidney beans (canned or cook in pressure cooker after soaking overnight)
^ 2Tbsp carob powder
^ 1/2c maple syrup
^ 1/4c coconut oil
^ 1/4tsp vanilla powder
^ 1/2tsp himalayen salt
shake in cinnamon and turmeric powder
^ 1-2Tbsp goji berries
^ 1/2 tsp baking soda
*Blend it all together.
*Stir in 1/2c chocolate chips.
*Pour into a baking dish. Top with a few choc chips and goji berries.
*Bake for 16mins. Remove from oven and let cool for 10 mins.
