Massaged Kale Salad
Quick and easy lunch/snack prep while my guy naps. Thawing his carrot purée takes longer than making my delicious and nutritious massaged kale salad!
Massage as much kale as you want with flax or olive oil until the leaves become darker and softer. Add some beans (nice to make a big batch from dried beans in the pressure cooker to have on hand!), avocado, salt/pepper, and what not some Cholula to give it a kick! Annnd enjoy!
