Nettle Pesto Pizza
Nettle pesto pizza for the win! 🤗🌿I came up with this pesto today and am pretty stoked on it. It was a hit with our friends at lunch today too:)
Nettles are such a great nutritive herb! High in minerals (iron, phosphorus, potassium, calcium, magnesium, manganese, copper, boron, strontium) , vitamins A, C, K, and B's, antioxidants, etc. An awesome anti inflammatory herb that can be used for the circulatory system (decrease BP), skin problems, lactation, allergies (by binding to histamine receptors), arthritis, infections, urinary tract (it's leaves are an aquaretic which means it increases urine flow without depleting electrolytes), and more! It's for those reasons that I want to incorporate into our meals in creative and tasty ways:)
Here's the recipe for the pesto (the measurements are guesses bc I never measure anything properly):
*Blanch 2-3c nettles
*Soak 3/4c pumpkin seeds for an hour or so
*Blend the blanched nettles, soaked pumpkin seeds, 1 clove raw garlic, and a bit of hemp seed oil. Add salt and pepper to taste.
What's on the pizza?
*The above nettle pesto
*whole blanched nettle leaves that we're marinated in a bit of balsamic vinegar
*Roasted sweeet potato slices and red onion slivers
*Some chunks of asiago sheep cheese
