Turmeric Veggie Egg Scramble
My son Jay has been asking for eggs more often lately, so tonight I made a big scramble and it ended up so tasty! Did you know eggs contain all the B vitamins ( including B12 which is extra important for my fam since we have a mainly vegetarian diet), omega3 fatty acids, choline, vit D/A/E, and minerals like selenium and iodine? I love adding them into our diet and am grateful for the hens that laid them. 🙏🏼
Sautée onion & garlic. Cook til the onions are a bit translucent. Add in summer squash and a bit of thyme. Sautée until tender. Throw in an enormous handful or two of spinach and let it wither down. Pour in some eggs that you've stirred in a bowl. Add a generous amount of ground turmeric and some steamed sweet potatoes. Stir it around slowly until the eggs are cooked the way you like them:) Top with avocado and gomasio with algae. Yum!
I served it along with some hemp seed couscous with walnut oil.
