Vegan Banana Oat Muffins

Vegan Banana Oat Muffins to swoon over😍 I've made some adjustments to the banana bread recipe I posted awhile back and made them into muffins. They're so tasty, moist, and wholesome🤗 

Ingredients: 

Dry:
* 1.5c oats
* 1/2c flour
* 1/2c almond meal (if you have nut allergies use 1 c flour total instead)
* 1.5 tsp baking soda
* 1tsp vanilla
* 1-2tsp cinnamon
* pinch of salt
* 2 tsp chia seeds
Wet:
* 1/4c + 1Tbsp coconut oil
* 2 large or 3 medium ripe bananas (smashed)
* 1/2c maple syrup

Preheat oven to 180c

Mix dry ingredients and then stir in the wet ones. Add in some chocolate chips if you like!

Put into a muffin tin. Sprinkle some cinnamon on top.
Bake at 180 for 6 mins. Turn up heat to 200c and bake for another 5-7 mins(that makes the outside a bit crispy but the inside stays nice and moist!)

Take them out when a knife can go into and out of a muffin clean. 

Let sit for 10 mins and then dive in!
